Chiles Con Papas

"Another good one from Central Market. If Hatch Chilies are not available in your area any green chile will work but I prefer Hatch. These chiles are long and green and not too very spicy but have great flavor."

  • Saute onions until tender.
  • Add green chiles.
  • Add diced potatoes.
  • Mix thoroughly.
  • Add boiling water to cover, cook down until potatoes are tender and creamy.
  • Add salt to taste.
  • Cooked potatoes my be used in place of raw potatoes, but only add a small amount of water to the mixture.
