- 473.18 ml fresh cilantro, chopped
- 29.58 ml olive oil
- 2.46 ml lime rind, grated
- 29.58 ml fresh lime juice
- 0.61 ml salt
- 2 garlic cloves
- 2 slice pickled jalapeno peppers
- 59.14 ml low sodium chicken broth
- 118.29 ml cucumber, seeded and peeled
- 118.29 ml radish, thinly sliced
- 59.14 ml celery
- 2 (878.83 g) can chickpeas, rinsed and drained
- 12 leaf boston lettuce
directions
- Combine 1st 7 ingreds in a food processor or blender; process til well blended.
- Add broth; pulse til combined.
- Combine cucumber, radishes, celery, and chickpeas in large bowl.
- Drizzle with cilantro mixture; toss to coat.
- Arrange lettuce leaves on a platter; spoon chickpea mixture over lettuce.

I am a former retail management slave who is now a stay at home mom who absolutely loves her job.
