I mixed all ingredients (using a bit more jalapeno) except for the cilantro and spinach in a dish and microwaved it covered on lower power to mix flavors and heat while I warmed the tortillas for 5 minutes wrapped in foil in the oven. Just before assembling, I added the cilantro and spinach along with some shredded cheddar cheese and served with Spanish rice and salsa on the side. I liked using the spinach, which was a flavorful change to a standard taco or burrito. Thanks Miz Harry!
