Chicken, Sweet Potato and Cauliflower Vindaloo

This is with out a doubt a fantastic dish. Great for week nights or any night. You can use breasts or pork, and it turns out great. If you use garam masala it ups the flavor.

  1. Heat 1 Tbsp oil in medium skillet.
  2. Season chicken with 1/4 tsp salt.
  3. Cook 7-8 minutes, remove to plate.
  4. Add rest of oil, sweet potatoes and onion to skillet and stir fry, 5 minutes.
  5. Add cauliflower and cook 3 minutes.
  6. Stir in curry powder, cayenne pepper and 1/4 tsp salt.
  7. Cook 1minutes.
  8. Add broth and tomatoes.
  9. Cook 5 minutes, covered stirring occasionally.
  10. Add chicken and heat through.
  11. Stir in mint and serve with quinoa.
