Quick, easy chicken salad recipe for lunchtime sandwich. Good for leftovers.
- 1 cooked chicken breast
- 2 tablespoons light mayonnaise
- 1 teaspoon curry powder
- 1⁄4 cup fresh cilantro
- 1⁄4 cup red bell pepper
- 1⁄4 cup yellow onion
- Mince chicken, onion, bell pepper, and cilantro.
- Add Spinblend
- Mix with curry powder and some salt if you like to taste. If you don't have curry powder, try a little ground cumin or coriander. I like quite a bit of curry, but some might find it to strong so add a little, taste, and suit yourself.
