  • Preheat oven to 400F.
  • Place the chicken breasts in a baking dish and set aside. In a large non-stick saucepan, heat the oil.
  • Add the green onions and garlic and saute over medium heat for 1 minute. Add the tomato puree, raisins, water and coriander and cook over low heat for about 10 minutes uncovered.
  • Pour the sauce over the chicken and bake for 30-45 minutes until chicken is cooked through.

  2. BTW, raisins are a good addition only I would use golden raisins and mush them up with a mortar and pestle or food processor. If you like you mole sweet try adding agave syrup which is a little better on the glycemic index and has a very nice full bodied flavor the marries well with the mole.
     
  3. i read the reviews and decided to make this, it was bland and i wasnt sure if i should put the seasonings on the chicken or in the sauce, any ideas how to make this better or get clearer directions for the ingredients?

I forgot to rate this and made it some time ago...it was DELICIOUS and to prove it, I'm back here to make it all over again. :D I served it with the brocolli like the picture, but baked some russet potatoes and topped them with sour cream and some of the leftover green onion. Thanks for the wonderful tasting dish! UPDATE: true to my word, I made this again tonight and the only thing that was wrong was that my chicken was tough, but it's been like that lately. I'm curious as to whether using a mallet on it to flatten it a little will make it more tender. Thanks again!
     
  5. This was good but my mom says it's not very traditional, but still delicious. I didn't use any raisins either. Also adding some grated cheddar cheese to this really enhances the flavor. Thanks!

  1. This is a lovely sauce. I used one chopped onion instead of the two green onions and left out the raisins, as we really like onions but aren't so fond of raisins. The chicken was nice and tender, as well as flavorful, and we had plenty of sauce-- Only cooked two chicken breasts, but we managed to eat all the sauce !
