Chicken Garlic Bites

"Simple and fun to make, great to eat! Prep time includes marinating the chicken. Use matzo meal instead of the breadcrumbs and this is good for Passover as well."

 1. I served these at the "appetizer" party that I hosted. After reading Dancer^s comments, I decided to triple the recipe which was a very good move. They didn't last long at all. The chicken was so flavorful and tender. Thanks for a great recipe. :-)

 2. This was a very quick and delicious too! I marinated my chicken for 2 hours and cooked them in the oven for 15 minutes. They were so tender and very tasty too. I served them with french fries and had a great meal. Thanks!!

 3. This is great. Baked not fried!!! Try serving with ranch dipping sauce and celery.

 4. This recipe is soooo easy (I used kitchen sheers to cut my chicken), quick and delicious!!! Will be making this again. I doubled the recipe, except for the pepper (I have young kids). We loved these. Thank you for a great recipe.

 5. What a terrific recipe! I had 3 plump chicken breasts, but still used the same amount of marinating ingredients and it worked very well. Since my two guys are not big on "spicy", I used Italian-flavored breadcrumbs instead of adding cayenne to plain ones; the result was delicious! These nuggets were gone in a flash; I should have made more. I found the recipe very easy to prepare and it was great that dinner could be on the table so quickly. It's a keeper, Mirj!

Tweaks

 1. This recipe was quick and easy and I'm sure we'll be using it again and again! Given more time, I think I would brine the chicken breast just because I'm not a huge fan of breast meat and that always makes it more juicy. In a pinch, though, this recipe as written was just great. I loved that flavor of the garlic 'underneath' the breading. I didn't have any breadcrumbs handy so I popped some cheddar garlic croutons in the food processor and used them instead. They made a wonderfully crispy crust and I think I'll use croutons every time! Thanks for a great recipe.

 2. Delicious & easy finger food! I made the marinade in a ziploc bag (less mess!) while frozen chx breasts thawed in the sink. I used panko bread crumbs instead of regular & added some salt to both the marinade & bread crumb mixture. Also went easy on the cayenne b/c we don't like our food too spicy. Will definitely be making this recipe again. Thank you for posting! :)

 3. I stumbled upon this recipe in my quest for fun appetizer ideas for a birthday party i'm throwing. I decided to give it a whirl last night, just to make sure it tasted as great as they sound... And let me tell you, they were GREAT! If you are a garlic person, you'll love these! If you aren't, you may want to decrease the amount of cloves and increase the amount of olive oil you use to suit your taste. It is a good idea to sprinkle them with Garlic Salt as suggested by nmcw24 as it adds that lil extra "pizzazz" to it! The only alteration to this recipe I made, was that I used west indian pepper sauce instead of cayenne pepper (that's all I had on hand) - WOW..! It's hot, garlicky goodness!

 4. Outstanding! Great recipe for parties, or for the kiddies. I used 3 teaspoons of crushed garlic out of a jar instead of minced cloves, and marinated the chicken for 3 hours. I also used slightly more than 1/2 c. breadcrumbs, and used chili powder instead of cayenne pepper. Baked for 12 minutes. Great garlicky taste. Perfect inside. Served with white rice and pork and beans. Thanks for this keeper of a recipe!

Well, I've been happily married, happily divorced, and happily married once again. (Wanna see wedding pictures? I'm married to a brilliant man with the most yummy British accent (this is the part where he rolls his eyes and says, Yeah, yeah, yeah). Let's call him Sushiman, even though he hates that name. Chia gave him that nickname when I was trying to create a dinner to show off my culinary talents. I posted here on Zaar with questions about the menu and since sushi was the main focus of the meal, he became Sushiman. That dinner was just the first of what I hope will become a lifetime of meals together.

This is a picture of us taken in September 2005 in Kew Gardens in London.
