- 4 boneless skinless chicken breast halves
- garlic powder
- salt and pepper
- 1.23 ml cumin seed
- 1 medium onion, halved and sliced
- 473.19 ml jar tomatillo salsa (mild or hot)
- 4 slice monterey jack pepper cheese
- 59.14 ml loosely packed chopped cilantro
- 59.16 ml sour cream
- 8 flour tortillas
directions
- Line baking tray with aluminum foil.
- Place chicken breasts on foil.
- Sprinkle with garlic powder, salt, and pepper to taste.
- Sprinkle with cumin seed.
- Place 1/4 of onion slices on each chicken breast half.
- Cover all with tomatillo salsa.
- Place another sheet of aluminum foil on top of chicken breasts and fold all four sides until sealed very tight.
- Bake foil packet on tray in 375 oven for 30 minutes.
- Remove from oven and carefully remove top foil sheet.
- Place a slice of pepper jack cheese on each chicken breast half.
- Sprinkle all with chopped cilantro.
- Return to the oven uncovered.
- Remove from the oven when cheese has melted.
- Meanwhile heat tortillas.
- Serve one chicken breast per person.
- Place a tbsp of sour cream on top of each chicken breast half.
- Serve with hot tortillas and refried or borracho beans.

This was a nice change of pace for chicken. I really like tomatillo salsa and love to use it in different ways. This gave me the opportunity to do so. The chicken wasn't as tender as I would have hoped for, but the flavor was tasty. Thanks for sharing your recipe! Made and reviewed for ZWT 5 for the Genies of Gourmet.

These were very delicious! Fast and easy, too, and I had everything I needed to make them. I used a salsa verde. I am shooting for low fat meals, also, so I used reduced-fat cheese and fat free sour cream. I skipped the tortilla. The only reason why I didn't give this 5 stars was because I didn't care for all the liquid in the bottom of the pan when I opened up the foil. I think when I make them again I will only cover the pan loosely, or maybe bake them uncovered. 5-star taste, for sure! Thanks for posting a diet-friendly tasty dish, PanNan.
