- 2 -3 boneless chicken breasts
- 1⁄2 cup Pace Picante Sauce
- 2 1⁄2 tablespoons soy sauce
- 1 tablespoon water
- 2 -3 boneless skinless chicken breasts
- 1⁄2 cup picante sauce
- 2 1⁄2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1⁄2 teaspoon sugar or 1/2 teaspoon sugar substitute
- 3 tablespoons vegetable oil
- 1 medium onion, cut into wedges
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger (I used 1 tsp ground and it was good)
- 2 cups broccoli florets
- 1 bell pepper, any color, chopped
directions
- Cut chicken into 1/2 - 1" cubes.
- Combine picante sauce, soy sauce, water, cornstarch, and sugar or sugar substitute in small bowl; set aside.
- Heat 2 Tbls oil (or spray non-stick pan with cooking spray) in large skillet on med high heat.
- Add chicken and stir-fry 5-6 minutes or until cooked.
- Add remaining oil(optional),onion, garlic, ginger, broccoli, peppers.
- Stir-fry 3 minutes or until vegetables are crisp-tender.
- Add picante sauce mixture; stir-fry about 1 minute or until sauce thickens. * Any bottled picante sauce can be used, or if you have a recipe you can use your own.
- Can serve alone or over cooked rice. (I prefer the rice).
