Cobbler Topping
- 1⁄2 cup flour
- 1⁄4 teaspoon baking soda
- 1 pinch salt
- 8 tablespoons unsalted butter
- 1⁄2 cup sugar
- 1 large egg yolk
- 1⁄4 teaspoon vanilla extract

Fruit Filling
- 3⁄4 cup strawberry
- 3⁄4 cup blueberries
- 3⁄4 cup raspberries
- 3⁄4 cup blackberry
- 3⁄4 cup rhubarb
- 1 tablespoon cornstarch
- 1⁄2 cup sugar
- 1 teaspoon vanilla extract
directions
- Preheat oven to 375.
- Gently combine (so you don't smash the fruit) all fruit.
- filling ingredients and set aside.
- Combine baking soda, salt and flour.
- Cream together.
- butter and sugar until light and fluffy.
- Beat in egg.
- yolk and vanilla.
- Add dry ingredients with a spatula.
- Place fruit filling in an 8 inch non-metallic baking pan.
- Evenly distribute tablespoon sized clumps of cobbler.
- across the fruit.
- Bake 40 minutes or until crisped and bubbling.
- Let cool.
- a bit but serve warm.
- Great with ice cream.

I live in Minnesota and own my own business - I am a manufacturers sales representative.
Since I travel some and my husband travels a fair amount in his job, I love to cook to
unwind and bring the family together over a home cooked meal. When one or the other
is traveling, left-overs work great! Since I like to try new recipes in addition to the old family
stand-by's my 6 year old loves to be in charge of labeling the new ones "keepers" or "throwers."
