  1. Trim fat from chops and cook fat in large skillet over high heat until rendered.
  2. Remove and discard crisp bits.
  3. In rendered fat in pan, brown chops quickly.
  4. Season with pepper to taste.
  5. Reduce heat to medium low and cook for 20 minutes, or until cooked through, turning once.
  6. Drain off any excess fat.
  7. Combine cheese and mustard to form paste.
  8. Spread evenly over each chop.
  9. Place tomato halves around chops and broil until cheese melts and tomatoes are heated through - about 5 minutes.
