Cheddar Cheese & Ham Soup

  • Melt butter in a large, heavy saucepan.
  • Brown carrots, celery, onion, ham and mushrooms over high heat.
  • Turn heat to medium and cook until tender.
  • Sprinkle in flour, paprika,dry mustard.
  • Stir over low heat about 5 minutes.
  • Gradually whisk in chicken broth and milk.
  • Stir until slightly thickened.
  • Add cheese and whisk until melted.
  • Do not boil.
  • Season with salt and pepper.
  • Top w/ parsley.

  1. Great soup for a cold and rainy fall day. I made the soup as directed using 3 cups of sharp cheddar cheese. The thing I liked most about this recipe is that it makes a nicely textured soup. In the past, I've found most cheese soup recipes to be too runny. I used 2 medium size carrots and celery stalks and will use one or two more of each the next time. Thanks, Aroostook!
     
  2. Solid base recipe and easy to make. Everything is pretty well done in this recipe. Tastes great!
     
  3. The soup itself was great, but the directions were a little ambiguous. I didn't know what heat to use for the thickening period--I kept turning it up because it wasn't getting thicker, but it said not to boil it, so finally after nearly 30 minutes, I decided the thinner consistency would have to do. Although it ended taking me much longer than the stated time, it did turn out delicious!
     
  4. I really liked this. It is not an overbearing cheese soup. I am thinking about throwing in some leftover cooked potatoes at the end. My DH doesn't like cheese soups, but ate this one. Go figure.
     
  5. This soup is heavenly! Very creamy, nice texture, lovely taste! Perfect on a cool night, served with warm bread or biscuts! I think that next time I will double the ham, mushrooms, and other veggies to make it even more filling and chunky; however, it was absolutely fabulous as is!

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
