ingredients
- 1 1⁄2 cups water
- 1 cup milk
- 5 -7 cardamom pods
- 5 black peppercorns
- 1 small shard cinnamon stick
- 1 tablespoon fresh ginger, roughly chopped
- 10 fennel seeds
- 1 pinch salt
- 1 black tea bag
- sugar or honey
directions
- Mix all ingredients except sugar and tea.
- Bring to a boil, then turn down to a simmer.
- Simmer mixture for 12 minutes.
- Add tea bag.
- Simmer 3 more minutes.
- Strain into a large mug.
- Add sugar or honey to taste.
- Enjoy!

This is my go-to Chai recipe. It's been taped inside my cupboard for years (the print out is date stamped 5/3/2011.) There is comfort in the ritual of the measuring, the steeping, the straining and the mixing, as well as the comfort of the gorgeous way it makes the house smell. On top of all that, there is the comfort of the drink!
