- 1 lb lean ground beef
- 2 (32 ounce) cans black-eyed peas with jalapenos, drained
- 2 cups rice, cooked
- 1 (16 ounce) can diced tomatoes
- 1 cup cheddar cheese, shredded
- 1⁄4 cup onion, minced
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 garlic clove, crushed
directions
- Brown meat.
- Combine all ingredients in 13X9X2 casserole.
- Bake at 350 degrees for 25 minutes.
- Serve.

This is really good! I changed a few things around but the basic idea remained the same. I omitted the ground beef, making this a vegetarian side dish. I used 2 cans of regular (not ranch style) black eyed peas, I used brown rice and I used mozzarella cheese instead of cheddar. The result was a tasty, savory, cheesy casserole that was spiced nicely with the garlic (I used 2 cloves of garlic) and had a tangy zip of the canned tomatoes. Thanks for the recipe!

I was looking for a black eyed pea recipe to make for New Years Day and came across this one. Sounded good to me! However, when I went to the store to shop (on NYE) they were completely sold out of black eyed peas (canned or dry). HAHA, probably the only day of the year that happens! I decided to get another variety of bean and picked adzuki, only to discover as I was making it today that they are considered auspicious on New Years Day in Japanese and Asian cultures - woo-hoo! We are vegetarian, so I used veggie ground beef instead. I also used black rice, which I cooked in the steamer. I then put everything in my crock pot. We were hungry so didn't wait a full 4 hours as I later saw the recipe recommended... probably only one hour. It tasted great, however, the onions weren't really cooked. So, for future I will either cook the onions first or make sure I wait the full 4 hours in the crock pot. Either way, great recipe!

This northerner living in the south had never made black eyed peas before. Glad i started with this recipe. Made it pretty much as is, used 4 cloves of garlic cuz I love lots of garlic, and the family raved! Used the slow cooker method & it came out perfect. Definitely will be making again. Thanks so much!

Super easy, and really delicious. I substituted ground turkey for the beef, 2 cans regular black-eyed peas, brown rice, and mozzarella cheese. It won over the men by having the word casserole in the title, it won over the kids cause it was a big pile of mixed up foods, and it won me over because it was very easy to make, and even easier to clean up after. Thank you!
