- 354.88 ml flour
- 4.92 ml baking powder
- 3.69 ml baking soda
- 0.25 ml salt
- 3.69 ml ground cardamom
- 2.46 ml cinnamon
- 118.29 ml butter, at room-temperature
- 177.44 ml light brown sugar, packed
- 1 egg
- 3.69 ml vanilla extract
- 236.59 ml peeled and grate carrot
- 236.59 ml chopped pecans
- 118.29 ml raisins (I like to use a mix of purple and white)
directions
- Preheat oven 325, grease 2 baking sheets.
- (or use silpat).
- Combine flour, baking powder, and baking soda, and spices.
- Beat butter with sugar until light and fluffy.
- Beat in egg and vanilla.
- Beat in flour mixture.
- Stir in carrots, nuts, and raisins.
- Drop generous tablespoons of batter onto baking sheets.
- bake until edges are lightly browned, 20-25 min.
