- 1 1⁄2 cups vegetable oil
- 2 cups granulated sugar
- 4 eggs
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 2 cups grated carrots
- 1 teaspoon vanilla

Frosting
- 1 cup butter or 1 cup margarine, softened
- 1 teaspoon vanilla
- 1 lb icing sugar
- 8 ounces softened cream cheese
directions
- Beat oil and granulated sugar approximately 2 minutes.
- Add eggs one at a time and beat inches.
- Beat in sifted flour, baking powder, cinnamon, baking soda and salt.
- Fold in carrots and vanilla.
- Bake at 350° for 40-45 minutes in 9x13-inch pan until tester comes out clean.
- Use an ungreased pan.
- For frosting: Mix the ingredients with an electric mixer and then smooth over cooled cake.
