- 236.59 ml rice flour
- 29.58 ml potato starch
- 14.79 ml rice bran
- 2.46 ml baking soda
- 2.46 ml cinnamon
- 78.78 ml sugar
- 1 large egg (or 1/4 cup Eggbeaters)
- 59.14 ml milk (or Lactaid)
- 236.59 ml freshly grated carrot
directions
- Preheat oven to 350 degrees F. Lightly grease a 4" x 6" baking pan, set aside.
- Sift all dry ingredients into a mixing bowl.
- Add egg and milk, stir well and stir in grated carrots.
- Pour batter into prepared baking pan and bake for 40 minutes.
- Allow to cool before slicing.
