ingredients
- 3 cups grated carrots
- 1 1⁄2 cups oil
- 2 cups flour
- 4 eggs
- 2 cups sugar
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 teaspoon salt
- 8 ounces cream cheese
- 1⁄2 cup margarine
- 1 lb powdered sugar
- 2 teaspoons vanilla
- 1 cup chopped nuts
directions
- Line 3 round cake pans with waxed paper.
- Oil and flour lined pans.
- Mix carrots, flour, eggs and oil.
- Mix sugar, soda, salt, cinnamon.
- Combine two mixtures.
- Bake at 350 degrees for 25 minutes.
- Cool.
- Mix cream cheese, margarine, powdered sugar and vanilla.
- Ice with icing mixture.
- Sprinkle with nuts.
