Carrabba's Champagne Chicken

- 29.58 ml olive oil
- 29.58 ml butter
- 4 thin chicken cutlets
- 78.78 ml flour
- 29.58 ml parmesan cheese
- salt
- pepper
- 118.29 ml sliced mushrooms
- 59.14 ml champagne (Dry. You can get dry sparkling wine for $6 a bottle)
- 157.80 ml heavy cream (or evaporated milk)
- 0.25 ml kosher salt
- 0.25 ml fresh ground black pepper
- 0.61 ml red pepper flakes
- 1.23 ml tarragon
- 170.09 g angel hair pasta, cooked and drained
directions
- Whisk together the flour, salt, pepper, and grated Parmesan.
- Rinse the chicken pieces in water. Dredge them thoroughly in the flour mixture, until well coated.
- Heat olive oil and 2 tablespoons of the butter in a large skillet on medium high heat.
- Add half of the chicken pieces, do not crowd the pan.
- Brown well on each side, about 3 minutes per side. Remove the chicken from the pan and reserve to a plate. Cook the other breasts in the same manner, remove from pan. Cover with aluminum foil and keep warm in the oven while you prepare the sauce.
- Add the champagne and mushrooms to the pan.
- Use a spatula to scrape up the browned bits.
- Reduce the sauce by half.
- Whisk in cream, kosher salt, black pepper, red pepper flakes and tarragon.
- Heat until sauce thickens to a creamy consistency.
- Serve chicken and sauce over angel hair pasta.

The most defining trait in my life is that I am a mother to two wonderful boys (Tyler, 20 and Zayden, 9). I live in the little college town of Selinsgrove, Pennsylvania. It is the most wonderful place to live as it's nestled in the Appalachian Mountains and along the beautiful Susquehanna River.
Seeing that we live in Central Pennsylvania, our family is also a bunch of HARDCORE Penn State Nittany Lion fans! We are...PENN STATE! I was lucky enough to be given tickets to see Joe Paterno win his 400th game as the head coach of the football team. I cried like I did when my children were born.
The other love of my life is cooking. I didn't really start trying to cook until I was 20, but believe me I have made up for lost time! I absolutely adore baking and I do it whenever I can. I love making Christmas cookies and I have begun hosting our extended families at our home for Thanksgiving and Easter dinners. So far so good.
