Carol Ann's Bacon Stuffed Mushrooms

20 mushrooms
ingredients
- 20 mushrooms (pop stems and chop stems)
- 1 medium onion (chopped)
- 1 package bacon (cooked very crisp and crumbled)
- 1 1⁄2 packages cream cheese (can use light)
- parmesan cheese
directions
- Microwave onion and chopped mushroom for 2 minutes on high.
- Stir and cook a bit longer.
- While hot, mix in cream cheese.
- Add bacon.
- Spoon into mushroom caps.
- Sprinkle freshly grated parmesan cheese on top.
- Cover with foil.
- Bake 20-30 minutes at 350 degrees.

I had no mess with these, I put the mixture into a pastry bag, and filled the caps. These turned out just great, BF raved on the first bite. I actually had an odd number of mushrooms, so I ended up with extra filling. I used the extra filling, and added some twice baked potatoes to the menu, they were YUM as well. Great little recipe here, that I will definately make the next time we entertain some company.

Actually I made these a few weeks ago as a side to our low carb diet. These little morsals are amazing. I will admit to they are a bit messy to make but worth the effort. Since it was just my husband and I we had some left overs that he took to work. He shared with a co-worker who immediately e-mailed me for the recipe. Wish I could take credit but kimke you deserve to take a bow! Thanks

I live in Omaha NE and am an audiologist at Boys Town National Research Hospital. I love to cook, as does my husband Michael. In the summer, we have a large garden and try to use alot of fresh fruits/veggies in our cooking. We have a 5 year old daughter, Kate and almost 2 year old son Sam and enjoy introducing them to new foods. One of their favorites is fresh pesto smeared on crackers!
