Carol Ann's Bacon Stuffed Mushrooms

"This is a recipe that my husband's family just loves. It is so good. It is a really quick appetizer to make (but a bit messy). Everyone just devours them. Good to double or triple."

  • Microwave onion and chopped mushroom for 2 minutes on high.
  • Stir and cook a bit longer.
  • While hot, mix in cream cheese.
  • Add bacon.
  • Spoon into mushroom caps.
  • Sprinkle freshly grated parmesan cheese on top.
  • Cover with foil.
  • Bake 20-30 minutes at 350 degrees.

  1. I had no mess with these, I put the mixture into a pastry bag, and filled the caps. These turned out just great, BF raved on the first bite. I actually had an odd number of mushrooms, so I ended up with extra filling. I used the extra filling, and added some twice baked potatoes to the menu, they were YUM as well. Great little recipe here, that I will definately make the next time we entertain some company.
     
  2. this is an awesome dish, and so very simple. Expect to be in the kitchen a long time with this, but once the bacon was cooked it all came together in a snap and was done even faster. This is a must for all mushroom lovers!
     
  3. Actually I made these a few weeks ago as a side to our low carb diet. These little morsals are amazing. I will admit to they are a bit messy to make but worth the effort. Since it was just my husband and I we had some left overs that he took to work. He shared with a co-worker who immediately e-mailed me for the recipe. Wish I could take credit but kimke you deserve to take a bow! Thanks
     
  4. I scaled the recipe in half with no problems; I placed the caps on a baking tray & covered with a large lid (instead of foil) so it wouldn't be as messy. They were very tasty but next time I'll cut back on the cream cheese. Thanx Carol Ann & Kimke!

I live in Omaha NE and am an audiologist at Boys Town National Research Hospital. I love to cook, as does my husband Michael. In the summer, we have a large garden and try to use alot of fresh fruits/veggies in our cooking. We have a 5 year old daughter, Kate and almost 2 year old son Sam and enjoy introducing them to new foods. One of their favorites is fresh pesto smeared on crackers!
