Fish burger with lots of spices. Perricone diet! Good with or without buns.
- 18 ounces raw salmon, chopped
- 1⁄2 cup red onion, minced
- 1 egg white
- 2 tablespoons fresh ginger, minced
- 1 1⁄2 teaspoons fresh garlic, minced
- 1 teaspoon ground coriander
- 3⁄4 teaspoon ground cumin
- 1⁄4 cup fresh cilantro leaves, chopped
- 1 tablespoon fresh lime juice
- 1 tablespoon lime peel, grated
- 1 tablespoon olive oil
- 3 -4 whole grain buns (optional)
- 1 1⁄2 cups baby greens
- 1 lime, cut into wedges
- combine salmon, egg, and spices. Form into patties.
- Saute in olive oil until golden brown. Approx 6-7 minute.
- Arrange greens, place burgers on greens, garnish with lime wedges.
