A sweet, refreshing salad. The mint brings out the natural sweetness of the cantaloupe!
- 1⁄4 ripe cantaloupe, seeded
- 1 teaspoon fresh chives
- 1 teaspoon white wine vinegar
- 1⁄4 cup mint leaf, crushed and chopped
- 1 teaspoon mint sauce
- With a melon baller scoop out 1 inch balls from the melon and place in a large bowl.
- Combine with chives, vinegar, mint, and sauce.
- Toss salad and serve.
