Cajun Spiced Portobella Mushrooms

  • In a wide shallow dish, mix together all ingredients except olive oil and mushrooms.
  • Lightly coat or brush both sides of the mushrooms, then dip in the spice mixture until thoroughly coated.
  • Place mushrooms on the barbecue and grill on each side until done.

  1. Yummy and easy! I am going to mix the cajun spice in with the olive oil and brush the mushrooms while grilling them; I think the flavor will come out more. The cayenne pepper was reduced because of my kids. ZWT9 Made for the Gourmet Goddesses July 2013.
     
  2. I really enjoyed these spicy mushrooms. I served mine as a burger with grilled red onion and sliced tomato. We used Recipe #503988 as a condiment, and it was a perfect combination. I had a bit more spice mixture than was necessary so ended up throwing some of it away since the shrooms had rolled in it. I would definitely make these again. I think melted pepper jack cheese would be nice on top. Made for ZWT9.

I live in Knoxville, TN with DH, my beautiful son, and the most spoiled cat on the planet! I grew up in Cincinnati and landed in TN by way of Bloomington, IN and Santa Fe, NM. Needless to say, it's been a long, strange trip!! To explain the name: I was veg for 11 years, vegan for 1. In the last year or so I started eating poultry and fish again, but my brother-in-law's nickname for me (smelly vegetarian) has always stuck.
