Portobella Mushrooms on Polenta

- 1 vegetable bouillon cube
- 1 cup polenta
- 3 cups water
- 3 -4 ounces grated cheese (optional)
- 4 portabella mushrooms
- olive oil
- 1⁄2 cup barbecue sauce
directions
- Prepare polenta. Bring water, bouillon, and polenta to a boil over medium-high heat. Stir until mixture becomes thick and smooth. Add cheese, if desired. Press in loaf pan and cool.
- Prepare mushrooms. Preheat broiler for 5 minutes. Remove mushroom stems and rinse. Place mushrooms on baking sheet, coated with olive oil. Brush mushrooms with sauce. Broil cap-side-up until lightly browned (about 3 minutes). Change setting to bake at 350 degrees. Roast mushrooms until tender. Slice.
- Slice polenta and sear in pan with olive oil.
- Serve. Place mushrooms on polenta and drizzle with additional sauce.
