Butterscotch Pie

My kids call this candy pie. It's so rich that we only have it for special occasions.

Directions

  1. Put packed brown sugar and margarine in pan and brown.
  2. Add 1/2 cup of water slowly and cook until sugar dissolves.
  3. In a separate bowl, mix brown sugar, cornstarch and salt.
  4. Heat can of evaporated milk.
  5. In a separate bowl, mix egg yolks and milk.
  6. Add egg/milk mixture to dry ingredient's mixture.
  7. Pour hot sugar mixture into heating milk.
  8. Add egg mixture.
  9. Cook until thick.
  10. Pour into baked crust.
  11. In a separate bowl, make meringue by beating egg whites with an electric mixer.
  12. Slowly add sugar.
  13. Beat until light and fluffy and stiff peaks form.
  14. Top pie filling with meringue and bake until meringue is golden brown.

I have made this pie five times since finding the recipe and each time it has come out beautifully and has tasted great. I've gotten compliments on it and requests for the recipe. I read the other review about it and all I can say is maybe for whatever reason the filling just didn't set up the way it was supposed to. Anyway, I have never had any problem at all and I do recommend this recipe

I have had butterscotch pie made by a friend of mine, and this was nothing like it. This pie was NOT good. Neither I nor my husband took more then one bite before we threw the whole thing out. It was runny and had a very strange aftertaste. She gave me her recipe, and somehow I misplaced it, but I do remember that she did NOT use water, cornstarch or evaporated milk and instead used scalded whole milk, flour and vanilla. I was hoping to duplicate her pie without bugging her for the recipe again, but I am going to call her tomorrow, remake my pie, and then post the recipe here.
