Buttermilk Mixed Flours Bread

"This recipe is a compilation of several I've tried and always baked in a Cuisinart Convection Bread Maker. If you change the combination of flours, ensure that the total amount measures 3 1/2 cups. The dough will be sticky but don't add flour, or much, because the texture of the baked product is soft. The young granddaughters love it!"

  1. Delicious bread! First time trying quinoa flour and I consider it a success. I didn't have any spelt flour so used 1/2 c quinoa flour. Also, used some oat flour and oat bran instead of oats. Added 4 tsp vital wheat gluten to ensure a good rise and 1/4 c ground golden flaxseed for the omega-3s. Decided to make rolls out of them so, after the first rise, I divided the dough into 12 smooth balls and let them rise in a 9x13" Pyrex dish; after the second rise, they took about 25 min to cook at 375F. Although I made some changes, my sense is that the spirit of the recipe showed through. Thanks for the great starting point!
