Buffet Potato Casserole

"I tried this recipe at a ladies Christmas luncheon. It was so good that I had to have the recipe."

ingredients

• 1 (2 lb) package frozen hash brown potatoes (Southern cut)
• 1⁄2 cup margarine, melted
• 1 pint sour cream
• 1 (10 ounce) can cream of chicken soup
• 1⁄2 cup mayonnaise
• 1⁄2 cup chopped onion
• 2 cups shredded cheddar cheese
• 1⁄2 teaspoon salt
• 1⁄2 teaspoon pepper
• 2 cups corn flake crumbs
• 1⁄2 cup margarine, melted

directions

1. Combine potatoes, and 1/2 cup margarine in a large bowl.
2. Stir in sour cream, soup, onion, mayonnaise, cheese, salt and pepper.
3. Place in a greased 13 x 9 inch baking dish or pan.
4. Spread the cornflakes on top and pour 1/2 cup melted margarine on top.
5. Cover with foil.
6. Bake 20 minutes at 350 degrees.
7. Uncover and continue baking for an additonal 20 minutes.
8. If refrigerated, add an additional 10 minutes.
