- 29.58 ml vegetable oil
- 453.59 g lean ground turkey
- 425.24 g can black beans, undrained
- 425.24 g can pinto beans, undrained
- 226.79 g can tomato sauce
- 118.29 ml hot sauce (a buffalo-style sauce like Frank's or Louisiana)
- 1 onion, chopped
- 1-2 serrano pepper, chopped
- 2-3 garlic cloves, crushed
- 3 celery ribs, chopped
- 3 carrots, peeled and sliced
- 3-4 tomatoes, diced
- 236.59 ml vegetable stock
- 14.79 ml chili powder
- 2.46 ml black pepper
- 4.92 ml salt
- 113.39 g blue cheese, crumbled
directions
- Heat oil in a dutch oven over medium-high heat. Brown ground meat for about 8-10 minutes, or until almost crispy and dry.
- Add all other ingredients to the pot, except for the blue cheese. Be sure to add the can liquid from the beans as well.
- Stir, bring to a boil, then lower heat and simmer for 2-3 hours. Stir every every 15 minutes or so.
- Serve in bowls topped with crumbled blue cheese.
