- cooking spray
- 2 1⁄2 cups whole wheat flour
- 1⁄2 cup all-purpose flour
- 1⁄2 cup steel cut oats
- 2 tablespoons brown sugar
- 1 tablespoon wheat germ
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 2 cups low-fat buttermilk
- 1 large egg, lightly beaten
directions
- Preheat oven to 325.
- Coat 9 x 5 inch loaf pan with cooking spray. linte the pan with parchment paper, and coat with cooking spray.
- Lightly spoon flours into dry measuring cups, and level with a knife. Combine flours and next 6 ingredients (through salt).
- Combine buttermilk and egg.
- Add to flour mixture and stir until just combined.
- Spoon the mixture into prepared pan.
- Bake at 325 for 1 hour and 5 minutes or until a wooden pick inserted in centre comes out clean.
- Invert bread onto wire rack, cool completely. Remove parchment.
- Slice bread into 12 pieces.

The combination of steel cut oats and wheat germ in this bread is awesome, definitely a great texture (if a little dry - I would add a tablespoon of oil or melted butter next time to see if that helped). Only problem I had was getting a decent crust on the loaf... the other recipes I've used for soda breads like this baked them freeform at 375F or so, not in a loaf pan. Will be playing with this though!

I am the mother of two wonderful boys, Henry and Thomas. Henry has very exotic taste and would eat olives and extra strong cheese all day if I let him. Thomas is a more basic creature who eats just about anything. I am married to Michael who must be a saint for not only loving me but eating anything I make! I lived in England for 10 years but have recently moved to British Columbia. I have always been a Canadian through and through.
