"I haven't made this yet, but it sounds so yummy! Like the kugel desserts I've had, only a touch healthier...I'm putting it here for safe keeping."

  • Preheat oven to 350 and spray a 9 x 13 dish.
  • Cook and drain noodles. Place into large bowl.
  • Add fruit and Smart Balance, mix well. Add remaining ingredients.
  • Spoon into prepared dish, and bake 35-45 minutes.

  1. Mmmm, this is sooooooo good! Loved it! Very filling, very rich and super yummy!<br/>The dried fruits go great with the noodles and custard. The cinnamon also is a nice touch, we would have liked even more of it and also maybe a hint of vanilla.<br/>I used two flax eggs for half the recipe and that worked out really well adding a nice nutty flavour. I pureed my cottage cheese and left out the butter spread. As I had them on hand, I used half dried apricots and half dried prunes and thought the apricots really added something to the dish. Other than that stuck to the recipe and was rewarded with something heavenly. Will surely make it again!<br/>THANK YOU SO MUCH for sharing this keeper with us, smelly!<br/>Made and reviewed for Veggie Swap #36 July 2011 and for the Fruit Event in the Photo Forum!
     
  2. Made this using the ingredients indicated (although I did use dried pears, & I was generous with the raisins) & had A GREAT TASTING KUGEL! Don't think it could have been any better! Also appreciated the use of the egg substitute & cottage cheese! Will certainly keep this recipe around! [Tagged, made & reviewed in Please Review My Recipe]

I live in Knoxville, TN with DH, my beautiful son, and the most spoiled cat on the planet! I grew up in Cincinnati and landed in TN by way of Bloomington, IN and Santa Fe, NM. Needless to say, it's been a long, strange trip!! To explain the name: I was veg for 11 years, vegan for 1. In the last year or so I started eating poultry and fish again, but my brother-in-law's nickname for me (smelly vegetarian) has always stuck.
