Breakfast Bruschetta

"Sweet berry bruschetta, make a great appetizer or breakfast. For another great healthy secret add flax seed to this. This is a diabetic recipe, use the same amounts of sugar instead of splenda is you are not diabetic. The flax seeds pump up the fiber, as well as add omega 3 fatty acids."

  • Slice french bread into 1/2 inch slices, Place the bread on a parchment lined cookie sheet, sprinkle with 2 tsp of the splenda, broil 3 to 4 inches from the heat. for 1 to 2 minutes until golden brown. Meanwhile combine cream cheese or like product almond extract and remaining plain splenda. Place spread on warm toast top with berries and almonds and flax seeds, lightly douse with 2tsp of powdered splenda. Serve 3 pieces a piece.

<p>Let see, I'm diabetic and so is my husband which explains my cooking style, we are not yet good diabetics who follow all the rules. LOL <br /> <br />Non food related: I'm a computer geek, I jump at new technology, I adore japanese culture but it is kind of alien to me since I was born in the states. No one would pick me out to be japanese-american. I love manga, and good fiction and cook books. I read about 30 books a month and fiend for fresh fiction and cookbooks. <br /> <br />I'm also a gamer and my nights are spent with my husband playing mmorpgs, so dinners need to be fast so I can join the group of friends I play online with. For work I'm a proffesional artist and a full time wife. This means my job is finding time to make art after cleaning up after my husband.</p>
