Brandy Cream Shrimp

- 1 cup chicken broth
- 3 tablespoons chopped shallots
- 1 cup whipping cream
- 4 tablespoons brandy
- 1⁄2 cup unsalted butter, cut in cubes and softened
- 4 teaspoons lemon juice
- 1⁄4 teaspoon white pepper
- 2 lbs large shrimp, peeled and deveined
- 1 tablespoon vegetable oil
- 1 tablespoon snipped fresh chives
directions
- In saucepan combine broth and shallots.
- Bring to a boil; reduce heat.
- Simmer, covered for 3 minutes.
- Stir in whipping cream and brandy.
- Simmer, uncovered for 10 minutes, or until reduced to 1 cup.
- Add butter, one piece at a time, whisking well.
- Stir in lemon juice and white pepper.
- In skillet, saute shrimp in oil for 4 minutes.
- Add sauce; heat through; sprinkle with chives.

I tried to cheat and used half and half instead of whipping cream, and smart balance margerine instead of butter, so the sauce was way too thin. It was still very flavorful though and I loved it. Served it over a bed of quinoa with roasted asparagus with feta on the side. Yum! Also, I halved the recipe and it was more than enough for two when served with a healthy amount of quinoa.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
