- 59.14 ml molasses
- 267.34 ml sugar
- 118.29 ml butter
- 2 eggs, beaten
- 236.59 ml 100% bran
- 236.59 ml boiling water
- 473.0 ml buttermilk
- 591.47 ml flour
- 12.32 ml baking soda
- 2.46 ml salt
- 473.18 ml all-bran cereal
- 236.59 ml chopped dates (optional)
- 236.59 ml raisins (optional)
- 236.59 ml chopped nuts (optional)
directions
- Pour boiling water over 100% bran and set aside.
- Cream sugar and butter, add eggs and beat til fluffy.
- Add buttermilk and 100% bran mixture (that was set aside).
- Sift flour, soda, salt and add into the batter.
- Fold in the all-bran and any other options.
- Spray muffin pans with vegetable spray.
- Bake 15-20 minutes at 400F degrees.
- This batter may be stored in the refrigerator in a tightly sealed container up to 6 weeks.

I, also, grew up on a similar recipe; but I think these muffins are even better. The dates make a wonderful addition! I creamed the malassass with the butter etc. I was dubious about saving the batter in the refrigerator, but it worked beautifully (although I was surprised at how thick the batter had become).
