This is a yummy bread. I always use the coconut. It goes great with the pineapple. This bread also freezes well.

  1. Preheat oven to 350F; grease 2 loaf pans.
  2. Cream shortening & sugar.
  3. Mix milk, eggs, lemon juice & pineapple: add to creamed
  4. mixture.
  5. Sift together flour, baking powder, soda and salt, beat into
  6. mixture.
  7. Fold in blueberries, nuts & coconut, then pour into loaf pans.
  8. Bake 1 hour, cool 10 minutes; remove from pans.
