I love blueberry muffins but I never could get any recipe to turn out the way I wanted - I finally developed my own easy recipe that is so yummy I bet you can't eat just one!
- Mix dry ingredients.
- Add melted butter with electric mixer.
- Add eggs.
- Add milk.
- Add baking soda and lemon juice.
- Stir in blueberries.
- Bake at 350 degrees for 16-17 minutes.
They taste okay....not great. Didn't stay in muffin form. Next time I'll use half the blueberries, a little more sweetener and mix in a different flour that's also gluten free.
