  • Mix the dry ingredients in a medium pot. Add the soy milk and bring to a boil over high heat, stirring constantly.
  • Turn the heat down to med-low and continue to cook, stirring constantly, for 3-5 minutes or until oatmeal begins to thicken.
  • Remove from the heat and gently stir in the blueberries. Cover and let sit for 3-5 minutes. Spoon into bowls and serve immediately.
