Black Bean Salad

ingredients
- 1 (16 ounce) can black beans, drained and rinsed
- 1 (16 ounce) can sweet corn, drained and rinsed
- 1 bunch celery, coarsley chopped
- 1 red bell pepper, coarsley chopped
- 1 orange bell pepper, coarsley chopped
- 1 yellow bell pepper, coarsley chopped
- 1 cup apple cider vinegar
- sugar, to taste
directions
- Combine all ingredients, except sugar and vinegar, in a large bowl.
- Create a simple vinegrette by adding sugar to the vinegar one tbsp at a time. Mix well and taste after each sugar addition until it pleases your pallet.
- Pour vinegrette over salad and mix well. Serve immideately.

This is a great recipe (especially for summer time)! Wonderful to make for a dinner party. We ate it as a side dish, and also in a salsa type fashion with chips! Great, both ways! Next time, I'll leave out the sugar, because the veggies we use are sweet enough for me. Thanks for posting! We'll enjoy this one a lot! :)

My husband and I have been happily married for six years and we have two amazing children!
I stay home with our son and daughter and stay busy in with local mom's groups and activities. I am a certified childbirth educator (bradleybirth.com) and also teach and supervise the Aqua Aerobic department at one of our local gyms. There is no better compliment than when some one takes a bite of my very own Chocolate Chip Cookies and says they are the best they've ever tasted! (Sorry, it's a secret recipe!) I would love to open my own bakery someday...
I like to cook for my family too, and have become exceptionally motivated since our son was born. I have been finding myself getting swept away reading cookbooks (while the kids are sleeping). :) I am really enjoying trying new recipes (and so is my husband) and I think I am becomming a "Foodie" so Recipezaar is simply heaven for me!
