ingredients
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can white kidney beans, rinsed and drained
- 1⁄3 cup chopped cucumber
- 1⁄2 cup chopped sweet red pepper
- 1⁄2 cup chopped green pepper
- 1⁄3 cup chopped onion
- 1⁄4 cup minced fresh cilantro
- 1⁄3 cup red wine vinegar
- 1⁄4 cup olive oil
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
directions
- In lg bowl, combine the first 6 ingredients.
- In sm bowl, mix remaining ingredients; mix well.
- Pour over bean mixture and toss to coat.
- Cover and chill before serving.

Yummy recipe--very attractive presentation. Only had red kidney beans and green peppers but the combination of onion, cucumber and cilantro was wonderful. Very refreshing summer salad. Feel bad only giving 4 stars--would give 4.5 if I could knowing this dish would probably rate five stars with just one more "little something" added--I'll have to try it with the red pepper and rate again! Thanks for a great and fast recipe!!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
