Bestemor's Norwegian Pancakes

This is my Grandmother's recipe she took to the states with her from southern Norway. It is very simple and a definite crowd pleaser. I recommend a cast iron tortilla or crepe pan heated until a drop of water dances on the surface.


  1. Beat eggs.
  2. Add milk and melted buuter and mix to combine.
  3. Slowly mix in flour.
  4. Add enough batter to form a thin layer on pan.
  5. When edges of pancake become crisp, flip pancake over and cook until lightly browned.
  6. Spread butter on pancake and spread maple syrup, jam, or sugar and tightly roll up pancake to eat.
