  • In second bowl, whisk egg, egg white, soy milk, applesauce, and vanilla, add zest.
  • Pour into dry ingredients.
  • Stir until just mixed.
  • Spoon batter into muffin tins sprayed with cooking spray.
  • bake for 20 to 22 minutes.
