- 1 1⁄2 cups whole wheat flour
- 1⁄2 cup oat flour
- 1⁄2 cup Splenda sugar substitute, for baking
- 1 1⁄2 teaspoons baking powder
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 egg
- 1 egg white
- 3⁄4 cup light vanilla soymilk
- 1⁄4 cup unsweetened applesauce
- 1 teaspoon lemon zest
- 1 teaspoon vanilla
- 1 cup frozen berries
directions
- preheat oven to 375.
- in bowl ,whisk together flour through salt.
- In second bowl, whisk egg, egg white, soy milk, applesauce, and vanilla, add zest.
- Pour into dry ingredients.
- Stir until just mixed.
- Spoon batter into muffin tins sprayed with cooking spray.
- bake for 20 to 22 minutes.
