Greek vegetable dish


  1. Place beans in a pot and cover with water. Bring to a boil.
  2. Simmer covered 2 to 3 hours, until just tender. Drain.
  3. Heat oil in a saucepan, add onion, and cook until translucent.
  4. Add garlic, tomato sauce, celery, carrot, bay leaf, oregano, sugar, salt, and pepper.
  5. Simmer 5 minutes. (If sauce is too thick, add a little water.).
  6. Add beans to sauce and simmer covered about 20 minutes or until tender.
  7. Serve hot or cold with a cruet of wine vinegar.
