Barbecue BBQ or Baked Spiced Rum Caribbean Chicken

ingredients
- olive oil flavored cooking spray
- 1⁄2 cup brown sugar
- 1⁄2 cup lime juice
- 1⁄3 cup soy sauce
- 1⁄3 cup cpt morgan spiced rum
- 1⁄2 cup water
- 1⁄4 teaspoon cayenne pepper
- 6 chicken breasts, boneless, skinless
directions
- To Bake: Spray a 9 X 13 glass cooking dish with olive oil cooking spray coating it entirely.
- Combine all ingredients in a glass baking dish, cover and marinate overnite.
- Bake in the same dish, covered @ 375 for 45 minutes, stir. Cover and continue baking for another 45 minutes. Stir and continue baking for additional 10 minutes, uncovered.
- Serve over Jasmine rice.
- To BBQ: Spray a 9 X 13 glass cooking dish with olive oil cooking spray coating it entirely.
- Combine all ingredients in a glass baking dish, cover and marinate overnite.
- Spray BBQ grill with olive oil cooking spray and grill chicken for 5 minutes on each side, until chicken is no longer pink & juices run clear. Be sure to baste continuously with Caribbean marinade. Enjoy!

This was super dooper delicious. I didn't have time to marinate the chicken breasts overnight, but I was able to manage several hours of marinating time during the afternoon. And that seemed adequate. The sauce is so delicious with such zesty Caribbean flair that flavored the chicken quite nicely. I was in a rush by the time dinner was ready, so didn't have time to make rice. But the sauce would have been great spooned over rice (as the intro states). Even so, we all really enjoyed this dish. I know I will make this often. Yum! Thanks for another keeper, Tallie in Pacific NW. Made for Fall 2012 Pick-A-Chef.

My favorite cookbook is the ever trusted Better Homes and Gardens Cook Book stuffed in the shelves in of every womans kitchen for nearly 100yrs. I borrowed it from a friend-needless to say, I kept the cookbook and ditched the friend! LOL Baking is NOT my forte, however, after 20yrs in the torture chamber, I'm proud to say that I CAN bake a mean chocolate chip cookie and some fabulous breads during the holidays! Anything more than that & you're on your on for sure. My most popular dish w/the family is my Southern Potato Soup recipe. It is a family recipe. Please enjoy it's comfort in the Winter months.
