Banana Nut Cake

"My mom used to make this for me on my birthday. She always knew that it was my favorite."

• Ingredients: 11
• Yields: 1 loaf

ingredients

• 1 cup soft vegetable shortening
• 2 1⁄2 cups sugar
• 3 cups sifted flour
• 1 1⁄2 teaspoons baking soda
• 1 teaspoon salt
• 4 egg yolks, beaten
• 6 tablespoons buttermilk
• 2 teaspoons vanilla extract
• 4 egg whites, beaten
• 1 cup chopped pecans
• 2 cups mashed ripe bananas

directions

1. Cream shortening and sugar.
2. Combine dry ingredients and add to creamed mixture alternating with beaten egg yolks and buttermilk.
3. Add vanilla.
4. Add mashed bananas and pecans.
5. Fold in beaten egg whites.
6. Bake in large greased tube pan at 350 for about 1 1/2 hours.
