Banana Nut Cake

ingredients
- 1 cup soft vegetable shortening
- 2 1⁄2 cups sugar
- 3 cups sifted flour
- 1 1⁄2 teaspoons baking soda
- 1 teaspoon salt
- 4 egg yolks, beaten
- 6 tablespoons buttermilk
- 2 teaspoons vanilla extract
- 4 egg whites, beaten
- 1 cup chopped pecans
- 2 cups mashed ripe bananas
directions
- Cream shortening and sugar.
- Combine dry ingredients and add to creamed mixture alternating with beaten egg yolks and buttermilk.
- Add vanilla.
- Add mashed bananas and pecans.
- Fold in beaten egg whites.
- Bake in large greased tube pan at 350 for about 1 1/2 hours.
