Banana Cake

- 4 ounces butter
- 3⁄4 cup caster sugar
- 2 eggs
- 2 ripe bananas (the blacker and softer the richer the cake is)
- 1⁄2 teaspoon vanilla essence
- 1 1⁄2 cups self-rising flour
- 2 tablespoons hot water
directions
- Pre-heat oven to 180 Celsius.
- Grease and/or line 20cm round cake tin.
- Cream butter and sugar.
- Add eggs and mashed banana and vanilla essence, beat well.
- Stir in hot water.
- Add S.R. flour and mix thoroughly. You end up with a sticky, thick mixture.
- Bake for 25-35 minutes. (I usually turn the oven off at about 30 mins, then leave cake in cooling oven for 5-10 mins).
- Check with a wooden skewer through the centre of the cake. When it comes out clean, cake is done.

I LOVE to cook. My father has been a chef for the last 40 odd years from when he learnt to cook in the army. He taught my mother and then me to cook, and i am now getting my 3yr old son into it as well. He loves to sit on the bench each night and "help" me make dinner.

My husband is not so much of a fussy eater, as he has just not experienced much in the way of culinary delights. i love it when i can make something new and a little more exotic that bolognaise and he likes it!!
