I first tasted this deep fried, and decided to try a baked version.

  1. Pour the boiling water over the couscous.
  2. Cover, and let it stand.
  3. Heat the olive oil in a skillet.
  4. Saute the chopped onion till golden brown.
  5. Add the green chillies and bell pepper and saute till tender.
  6. Add the tomatoes and cook till the juices dry.
  7. Add mustard powder, cumin powder and salt and stir for a minute.
  8. Remove from the heat and wait for the mixture to cool down.
  9. Fluff up the couscous with a fork and add the cooked mixture to it, stirring well.
  10. Add the yoghurt and season with oregano.
  11. Preheat the oven to 175°F.
  12. Take handfuls of the couscous mixture and shape into patties.
  13. Place the patties in a lightly greased baking tray.
  14. Bake until patties are golden brown and crisp--it took me 12 minutes.
