Bacon-Spinach Quiche

"I like to have this sometimes on Sunday for brunch when I want something a little eggy/cheesy. Usually I serve it with a light crisp green salad with some sort of vinaigrette. Other times, usually in summer, I will cut up some fresh fruit, like cantaloupe and pieces of watermelon and strawberries and serve with. It makes a nice light meal. This particular recipe is from Barbara Jones."

  • Rub softened butter on the inside surface of pie shell.
  • Drain spinach; squeeze out as much liquid as you can.
  • Place spinach in pie shell and top with crumbled bacon.
  • Whisk together cream, eggs, cheese, salt, and nutmeg.
  • Pour mixture into pie shell.
  • Bake quiche at 425 F for 10 minutes, then reduce heat to 325 F and bake for an additional 35-40 minutes or until quiche is set.

  1. Merry Quichemas! This was breakfast in bed for the wife. Awesome and simple to make. Great instructions. Used my own pie crust recipe. Also did the onion saute thing suggested by others. Everything came out great. No soggy crust. I like quiches to be more eggy, but the flavors were so perfect together, I won't even tweak this recipe. And the wife loved it as much as I did. Do real men eat quiche? Yes, and they'll bake it for their wife too. Thanks for this recipe.

  3. Fantastic! Used half and half instead of cream, sharp cheddar cheese and 1/2 chopped onion. Sauteed the onion til translucent first and the spinach to dry it out some. Did not have any bacon but the flavors were remarkable. Lovely recipe. Will try it with mushrooms next time.
     
  4. I make quiche fairly regularly to use up miscellaneous vegetables in my fridge but tried this tonight and my 14 yr daughter said it was the best quiche I have ever made. Stuck fairly close to recipe using 3 eggs and 2/3 cup milk; only had shredded Tex Mex cheese on hand and 1.5 cup chopped spinach but I think this recipe works with almost any minor adjustments. I think the hi-low baking times might help getting the right texture. Thanks - this will be a 'go to' quiche from now on!
     
  5. I made this quiche and I've made them before, but spreading butter on the inside of the pie crust I should've never done. The crust didn't cook, it was still almost raw. The taste of the filling was good though.

  1. I used spicy sauage instead of bacon and added carmelized mushrooms and onion...yumy!
     
  2. I used sausage instead of bacon but it was terrific, great consistency, the cooking directions make it come out basically perfect. I will use this one over and over, Thanks.
     
  3. I used cubed smoked ham instead of the sausage, and 1/2 and 1/2 instead of the cream -- still turned out great. Terrific recipe -- thanks.
