I don’t often eat breakfast, but I started to get a little hangry late in the morning. I happened upon this recipe and figured it sounded simple enough! Well, it was. Prep is quick and is done before oven finishes preheating. I used turkey bacon instead of regular bacon, but adhered to the rest of the ingredients exactly. It cooked for 25 minutes in the 11x7” pan and had a delightful light custard texture to it. I debated if I should eat several servings, but decided to exercise some self-restraint!

I added 1/4t. salt and 1/4t. season salt instead of 1/2t. salt. I added 2 extra eggs. Besides eggs, I added 3T green onions, (I love onions), 1/4-1/2C finely chopped ham steak, and 5 pieces cooked bacon chopped. I used everything else in the rcp as directed. I baked at 350° for 35 minutes. 2 people tried it for the first time and said it was amazing! One even asked for the recipe.

I love to try new recipes, and this is a wonderful site to find new additions. I rarely make the same thing twice because it's so much fun to try something different. My life long dream is to travel the world and eat my way around it.
