This is a delicious loaf bread dessert. Not too sweet and the baby food makes it moist.
- 2 cups self-rising flour
- 2 cups sugar
- 3 eggs
- 3⁄4 cup oil
- 2 (4 ounce) jars plum baby food
- 1 teaspoon clove
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 cup chopped nuts
- Blend together first four ingredients.
- Add the remaining ingredients.
- Stir, do not beat.
- Bake at 350°F for approximately 50 minutes in a greased, floured loaf pan.
The recipe I have also includes a glaze of 1 cup powdered sugar combined with lemon juice. It is to be poured over the cake while it is still hot. Delicious!
I had the recipe for banana cake and lost it. I made this one with plum yesterday and it was absolutely delicious!
This recipe has been my family for years as well!! Over time we have made a few changes that I thought I would pass along! Our recipe called for 2 cups of oil which I have changed to 1 cup of oil and 1 cup of applesauce. We have also experimented with various baby foods and my 2 year old daughter LOVES the apple/blueberry. And last but not least, we add 1 tsp ea of almond flavoring, butter flavoring & vanilla!! ITS COMPLETELY YUMMY!
