Avocado Mashed Potatoes

- 4 large russet potatoes (scrubbed or peeled)
- 1 avocado
- 1 tablespoon butter
- salt and pepper
directions
- Cut the potatoes into quarters.
- Drop them in a quart of salted, boiling water and let cook for 10-15 minutes or until easily pierced by a fork.
- Cut the avocado into four parts lengthwise and discard the rind and pit.
- When the potatoes are done, drain them and immediately add the butter, avocado, salt and pepper to ensure the potatoes are still hot for best mixing.
- Mash the ingredients together so that the avocado is mixed evenly throughout - I prefer a hand-held mixer with a blender or whisk attachment.

I don't mind a challenge, or a mess, so I often substitute in things like spelt flour, agave nectar, and whatever else I have on hand instead of what the recipe calls for. I'm also a big fan of cutting the sugar is most recipes in half. Plus, I love the way whole grains taste. I don't believe that just because something has been done one way "forever" means that it is the right way or rather, the only way to do it. My mother is gluten intolerant, my sister can't have dairy or eggs, and I am sensitive to sugar, so I also like to explore ways in which all of us can have a satisfying meal. Plus, my boyfriend will eat anything I put in front of him and not complain. He only asks again for the really good stuff, and fruit deserts. He is also possessive of anything I bake, so suggesting we drop some English Muffins or bagels off at a friends house is always met with a, "But those are my *insert baked good here*! Oh fine, we can do it if you want." And then he makes a sad face. It's nice to have at least one fan.
