Company will enjoy this healthy appetizer. This recipe can also be eaten as a salad. The avacado will stay fresher if mixed in just before eating, but it can be mixed in as directed below. Company I have served this to have all asked for the recipe. It's good!

  1. Mix olive oil, lemon juice, red vinegar, oregano, salt and pepper to make the dressing. Let this dressing mixture set for 6 hours or over night in refrigerator.
  2. Mix in the remaining vegetable ingredients with the dressing about two hours before serving.
  3. Serve with tortilla chips.
